Pumpkin Chili

Autumn cravings often revolve around pumpkin and soup. This recipe seamlessly combines these favorites into a single, harmonious dish—a true best-of-both-worlds delight! The natural sweetness of pumpkin complements an array of spices. If fresh pumpkin isn't readily available, you can easily substitute it with butternut squash, acorn squash, or any other hard squash variety.

Ingredients:

  • 2 pounds of ground beef

  • 1 green bell pepper, finely diced

  •  1 large onion, diced

  • 2 (15-ounce) cans of kidney beans, drained

  •  1 (46-fluid-ounce) can of tomato juice

  • 1 (28-ounce) of peeled and diced tomatoes with their juice

  • ½ cup canned pumpkin purée

  •  1 tablespoon pumpkin pie spice

  • 1 tablespoon chili powder

  •  ¼ cup white sugar

Directions

  1. Put beef in a large pot and cook it over medium heat until brown.

  2. Stir in the bell pepper and diced onion, and sauté for about 5 minutes until they become tender.

  3. Add the drained kidney beans, tomato juice, diced tomatoes with their juice, and pumpkin purée to the pot.

  4. Season the mixture with pumpkin pie spice, chili powder, and white sugar.

  5. Allow the chili to simmer for approximately 1 hour, letting the flavors meld together beautifully.

Pumpkin Spice Yogurt Parfait

Ingredients:

  • ⅔ cup (150g) low-fat Greek Yogurt 

  • 1/2 cup (120g) pumpkin purée

  • 1/2 to 1 teaspoon ground cinnamon

  • 1 tablespoon maple syrup

  • 1/3 cup granola

  • Optional: sliced strawberries

Instructions:

  1. Combine the yogurt, pumpkin purée, cinnamon, and maple syrup in a small bowl, creating a flavorful pumpkin spice mixture.

  2. Serve the mixture in a glass. If you like, top it with some sliced strawberries and granola.

Pumpkin Gingerbread

Ingredients:

  • 3 cups sugar

  • 4 eggs

  •  1 cup vegetable oil

  •  ⅔ cup water

  • 1 (15-ounce) can of pumpkin purée

  • 1 teaspoon ground cloves

  • 2 teaspoons ground ginger

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground allspice

  • 3 ½ cups all-purpose flour

  • 2 teaspoons baking soda

  •  ½ teaspoon baking powder

  • 1 ½ teaspoons salt

Directions:

  1. Preheat your oven to around 350 °F. Lightly grease two 9x5 inch loaf pans.

  2. Mix sugar, eggs, and vegetable oil in a bowl; beat until the mixture turns smooth. Add water and continue beating until well blended. Stir in the pumpkin purée, ground cloves, ginger, cinnamon, and allspice. 

  3. Blend flour, baking soda, baking powder, and a little salt in a separate medium-sized bowl. Gently fold these dry ingredients into the pumpkin mixture, stirring until all ingredients are well combined. Divide the batter between the prepared pans.

  4. Bake in your preheated oven until, when you insert a toothpick in the bread, it comes out clean. This should take about 1 hour.
